Simple summer cocktails to impress

Cocktails make any occasion feel extra special, so what better time to bring out your inner-bartender than at Christmas and summer parties. We consulted the experts at House of Pocket, where head bartender at Pocket Bar, Charlie Ford was kind enough to share two cocktails he'll be whipping up this summer. Gentleman's Rhumba

What you'll need:

45mL pisco
20mL pineapple wine*
Juice of 1/2 a lime
15mL agave
1 dash orange blossom water
1/2 an egg white

How to make it:

First, prepare your *pineapple wine. Cut the skin off a fresh pineapple (it's ok to include some of the flesh) and chop into small pieces. Add these to a bottle of Lillet Blanc (if you don't have this, any leftover white wine you have in the fridge will work, the more aromatic the better). Leave to sit for around an hour at room temperature before popping into the fridge overnight. Strain the mixture, discard the pineapple skins and rebottle.

Next, chill your glasses in the fridge while you put your cocktail together. Add all ingredients to a cocktail shaker - Pocket Bar's top tip is to hold off on the ice at this point and give your ingredients a good shake! This will help whip up the egg white and give your drink a fluffier texture. Now add a scoop of ice and give the mixture one final shake. Strain into your chilled glass, garnish with a slice of lime and enjoy!

Rio Grande

What you'll need:

30mL white rum
30mL sauvignon blanc
Juice of 1/2 a lemon
10mL ruby red grapefruit juice
5-6 blueberries
2 tsp caster sugar
Soda water to top

How to make it:

This cocktail is super simple - pop your glasses in the fridge to chill while you add all of your ingredients to a cocktail shaker. Now give it a good shake! Once everything is well combined, strain into your chilled glass and top with soda water. Garnish with a skewer of blueberries and a couple of slices of grapefruit if you fancy and enjoy!
