In lieu of a weekend recipe, we're serving up a tabletop styling tutorial to pair with this pretty pavlova. Senior Stylist Jono Fleming was greeted by every Aussie praise phrase under the sun when he produced this set up, so we thought you might like to know his top tips before your next Australian affair (January 26th, perhaps?). We've broken it down into five easy to follow steps, and ensured that this look is achievable with what you have at home...
Begin with a base
To kick things off, your canvas should have character. Rustic timber equates to a relaxed dining feel. No need to head into the woods, wild one, it could be as simple as an old outdoor table left lying around in the rain.
Colours must complement
Jono's colour palette was inspired by Australian natives. The blossoming gum, in particular, employs a clever trio of key colours: reddish-pink, green and brown. The power of three packs a pleasing punch and allows you to use neutrals and metallics to add depth later on.
It's a balancing act
This just in: the centrepiece doesn't have to be purely about decoration. It can be a mixture, whereby the pretty is completed by the practical. Take Jono's use of textural timber and foliage. Enter servingware. A large jug of water (or wine) adds height, and by positioning it in the middle everyone gets a go. A platter of fresh fruits and nuts make for extra styling moments that you can spread around, and best of all, they're edible!

Be playful and relax. The Australian table is a casual affair. Don't get hung up on the idea that everything has to match or be the same size. Mix up the bowls, plates and textures and keep it loose and organic, modelled on Mother Nature herself.
The magic of metal
Get fancy with finishing touches. Before you pop the bubbly, scatter some sparkle across your table setting. We gave rose gold cutlery the call up, but brass would get the job done as well. Getting back to balance, metallic adds polish to the rustic table and really sets the scene for a stylish Australia Day lunch.
