Potluck picnic ideas
It's no surprise we've mastered the art of picnicking. It fits perfectly with Aussie culture: relaxed, outdoors, fun and fuss-free. Why not make the load even lighter, and get everyone to bring a plate? We're big fans of Donna Hay's picnic food ideas, especially her falafel burgers with pickled red cabbage, and Asian-style pork sausage roll bites.
Picture perfect
Visually impressive food doesn't have to be difficult. Check out Jamie Oliver's Greek-style quinoa salad bomb, which is simple, yet cleverly shaped into a mould for a point of difference.
Otherwise, it's all about colour. Chef Matt Moran's heirloom tomato, watermelon and confit lemon salad (below) is a cinch to make, and is a refreshing picnic salad to go with a roast chook.
Transport tip
Given this salad is all about the simplicity of a handful of ingredients, it's worth transporting each of them separately to ensure each component stays as fresh as possible. To avoid the basil wilting, wrap in paper towel or a clean tea towel.
